I'm still using MySQL V3.22.19b on Solaris 2.6, and I can't reproduce
your problem.

I tried your example:
> CREATE TABLE fish (
> num_fish ENUM('one fish', 'two fish')DEFAULT 'one fish' NOT NULL,
> );
(but with a space before DEFAULT and no trailing comma)

And "mysqldump --no-data test fish" gives me:
| CREATE TABLE fish (
|   num_fish enum('one fish','two fish') DEFAULT 'one fish' NOT NULL
| );

No idea, what's going wrong with your setup ...
