how being used? - customers per project

Hello -
 
I was about to set up latest release of eventum and I'm trying to decide the
best direction for layout.   Are you (the collective you) assiging a
customer per project or many customers to many projects?
 
For those using this as a help desk tool, are you giving each customer their
own project/email id to correspond with?
 
How do you feel it is best to handle many customers - similar types of
issues but not exact issues?
