Oi, what a gnub I can be. I KNEW that I saw custom field definitions 
somewhere, but they weren't on the "Areas" links. Lo and behold, if I 
had just looked at the "Configuration" options on the admin screen, 
there they were.

10000 lashes with a MS Certificate of Authenticity for me!
